Have you ever wanted to cut out gluten and bread and found rice and corn crackers dry and boring? Try these wonderful seed crackers, a nutrient rich dairy free, gluten free, grain free, sugar free—phew—alternative to bread.
Ingredients
- 1 cup almond meal
- 2 tbs sesame seeds
- 2 tbs flaxseed meal
- ¼ tsp Himalayan salt
- 1 tsp whole coriander seeds, freshly ground
- 1 tsp whole cumin, freshly ground
- 1 egg
- 1 tbs olive oil
- ½ tsp sesame oil
- olive oil, extra
- ½ tsp Probiotic Foods for Gluten and Fructose Intolerant
- Preheat oven to 180°C.
- Combine dry ingredients in a mixing bowl.
- In a separate bowl, whisk together egg, olive oil and sesame oil. Pour into dry ingredients and mix thoroughly until a stiff dough is formed.
- Place dough between two sheets of baking paper and roll to an even thickness of about 3mm.
- Carefully transfer paper and dough onto a baking tray. Remove top layer of baking paper.
- Score the flattened dough into small squares or fingers. Brush with extra olive oil.
- Bake for around 15 mins or until golden and crispy. Cool on a wire rack, then snap and store.

Why the inclusion of flaxseeds? The seeds’ high fibre content is beneficial for heart health, and the fact that they are a rich source of omega-3 fatty acids can help lower blood cholesterol and blood pressure.
